Source: Technomic, Inc.; company reports The Top 500 full-service chains accounted for roughly 50% of all U.S. FSR sales in 2009. As a whole, this group?'s sales decline of 2.9% was not as severe as the total FSR industry, which experienced a nominal decline of 6.0%. FSR Asian (up 2.9%) was the only full-service menu category to experience an increase in sales. Within this group, several mid-sized brands, including RA Sushi Bar Restaurant, Stir Crazy Fresh Asian Grill and HuHot Mongolian Grill, helped drive growth with double-digit sales increases. Italian (down 1.0%), family style (down 2.2%) and varied menu (down 2.6%) registered sales declines that were smaller than average. However, there were some individual standouts within these categories. The Italian cluster was led by Olive Garden with $3.3 billion in total sales, an increase of 4.0%. IHOP boosted sales in the family-style cluster with an increase of 5.7% to a total of $2.5 billion, buttressing its #1 position in the category. The largest varied-menu player, Applebee?'s, experienced a sales decline of 2.1% to a total of $4.4 billion; the category?'s second largest chain, Chili?'s Grill & Bar, saw its sales decline 9 (C)Technomic, Inc., 2010 Technomic Top 500 Chain Restaurant Report an estimated 4.8% to $3.8 billion. Within this category, exceptional sales growth was experienced by chicken wing-focused concepts, such as Buffalo Wild Wings Grill & Bar (up 21.7%), Buffalo Wings & Rings (up 40.0%), Wow Caf? & Wingery (up an estimated 32.5%) and Hurricane Grill & Wings (up an estimated 12.9%). In 2009, significant declines were seen in the steak concepts (down 6.4%) and seafood concepts (down 4.2%), with upscale-casual and fine-dining chains struggling. Some of the hardest hit were Morton?'s The Steakhouse (down an estimated 23.8%), Black Angus Steakhouse (down an estimated 30.5%) and Oceanaire Seafood Room (down an estimated 20.6%).
