COMPLAINANT STATED THE PREVIOUS HEAD CHEESE MAKER THREW CHEESE INTO THE GARBAGE THAT THEY SAW RATS EATING AND THE OWNER MADE SOMEONE ELSE TAKE OUT PUT BACK ON SHELF. COMPLAINANT SAID THE DOORS ARE NOT KEPT CLOSED LIKE THEY ARE SUPPOSED TO BE. UPON MY ARRIVAL AT THIS ESTABLISHMENT, I NOTICED THAT ONE OF THE CHEESE AGING DOOR WAS NOT COMPLETELY CLOSED. THE BOTTOM AND TOP OF THE DOOR HAD A GAP BIG ENOUGH THAT FLIES AND SMALL RODENTS COULD POTENTIALLY ENTER THE ROOM. THIS DOOR WAS COMPLETELY CLOSED BEFORE THE END OF THIS INSPECTION. ACCORDING TO THE HEAD CHEESE MAKER, WHO IS ALSO THE PERSON IN CHARGE, THERE WERE NO CHEESE THROWN AWAY SINCE HE TOOK OVER POSITION OF HEAD CHEESE MAKER NINE MONTHS AGO.
