Our department received a complaint of a fire that started in the kitchen and went to the roof. The complaint is
valid. Two of the Colton Fire Department representatives are present at the facility at the time of inspection. The
exhaust hood and fire suppression system are badly damaged by the fire. The ceiling panels in the food prep
area are fire damaged. Observed the insulation under the ceiling panels exposed in the food prep area. Photos
taken. Observed live adult German roaches in the food prep area.

Reference - HSC

Immediately repair the fire-damaged exhaust hood and the fire suppression system. Call the Colton Fire
Department for a re-inspection prior to re-opening for business. Immediately cease and desist the use of the
cooking equipment under this damaged exhaust hood until re-certified and signed off by the Fire Department.
Immediately replace all damaged ceiling panels in the prep area and eliminate roaches in the facility. The
permit to operate the facility is hereby suspended and the facility ordered closed due to imminent health hazard
(exposure of ceiling insulation, fire-damaged ceiling panels, and live adult German roaches in the prep area).
The permittee has the right to a hearing if requested in writing within 15 calendar days of the receipt of this
notice to show cause why the permit should not be suspended or revoked.
